Description
Vendhaya Kali (Fenugreek Kali) is a traditional, highly nutritious South Indian (Tamilnadu), this sweet has a unique taste.
INGREDIENTS:
Fenugreek seeds, urad dal, palm jaggery, and sesame oil.
USES:
It is rich in calcium and iron. It is traditionally given to adolescent girls when they attain puberty and to women post-pregnancy to strengthen the back and hip bones. It helps in regulating blood sugar levels (ideal for diabetics), improving digestion, reducing acidity, and easing menstrual cramps.
Preparation Method:
1. Soak: Fenugreek seeds, urad dal, and rice are soaked (usually for 3-4 hours or overnight).
2. Grind: The mixture is ground into a smooth paste.
3. Cook: The batter is cooked in a thick-bottomed pan with water, stirred continuously to avoid lumps.
4. Sweeten and Season: Palm jaggery syrup is added once the mixture thickens followed by sesame oil
5. Serve: The dish is ready when it reaches a thick, glossy consistency that doesn’t stick to wet fingers.
